8Things Katoomba - Eat in or take-away “street” food prepared daily - by international chef Misha Laurent. With a passion for food and travel, and a family background in hospitality, french-born Misha has over 20 years experience in the food industry.

Whilst growing up in Paris he was exposed to North African/ Mediterranean culture and cuisine, which later became his passion and is reflected in his style of cooking today. His formal hospitality training began at the Sheraton Hotel in Munich, where he graduated in Hotel Management. With a desire to cook & travel, he was able to work in Europe, S-E Asia, and North America, during which time he developed a taste for quality Street food.

After working as head chef for two prominent Blue Mountains restaurants Misha decided to make the area home and has since focused on offering a variety of quality foods that had not previously been locally available.“We should not have to travel to Sydney or abroad to get these dishes.”Along with his love of food Misha has a true love of urban music, particularly funk and hip hop. He felt Katoomba had an urban vibe about it and was the perfect location for a street food venue where he could serve the food he loves while playing the tunes that move him.

Why would I choose tonic No.8 over your other tonic waters?

We get it. We make too many tonic's. It's kind of annoying. And confusing. Each tonic in our portfolio exists for a very specific purpose and caters to either a unique craft spirit pairing experience or customer need. In the case of our flagship Tonic No.8, it was created to deliver a versatile, punchy tonic, worthy of accentuating most craft gins, delivering a world-class G&T.

Are your products Vegan and/or Gluten Free?

Yes. Because our products are soft drinks, they generally don’t eat any animal products or gluten at all. They also, thankfully, don’t contain any.

Where are your products made?

Our products are all made in regional Victoria, near the Macedon Ranges. We picked that spot because the water is pure, the cows seem happy and we think it will make a nice place to see out the rest of the apocalypse.

Are your ingredients locally sourced?

Approximately 97% of our ingredients are grown, made or produced in Australia. The obvious exceptions being certain extracts or specialty ingredients like Yuzu juice. But we have a friend of a friend who just put in [two!] Yuzu trees so we should be sorted for a few Yuzus by the year 2035.

Why is this tonic called No.8?

Much like passing our driving test, it took 8 goes before we got this game changing Indian Tonic right. Although, unlike the driving tests, no inner suburban driving instructors were harmed during the creation of Tonic No.8

Why is the number 8 special?

Number 8 is important as it represents balance in the spiritual and materialistic world, with Saturn as the ruling planet. Characteristics include being ambitious in life and diligent in their work.

What is the meaning of 8?

In Pythagorean numerology [a pseudoscience] the number 8 represents victory, prosperity and overcoming. Eight [八, hachi, ya] is also considered a lucky number in Japan, but the reason is different from that in Chinese culture. Eight gives an idea of growing prosperous, because the letter [八] broadens gradually.

What is the number 8 in religion?

Christianity. Eight is the number of Beatitudes in Jesus' Sermon on the Mount. It is allegoric to what is beyond time [because the number 7 refers to the days of the week which repeat themselves].

What are number eights?

A number eight is a central midfielder who traditionally operates as a box-to-box player, doing both attacking and defensive jobs. In the modern game, however, the role has evolved to include support play through the inside channels, with lots of matches seeing more control and less end-to-end football.
